Chicken Buddah Bowl

Ingredients:

  • ¼ small red cabbage, finely shredded

  • 2 tsp apple cider vinegar

  • 40g baby spinach leaves

  • 1 cup cooked brown rice

  • 1 avocado, cut in half

  • 1 cup (160g) Moira Mac's Shredded Chicken

  • 1 lebanese cucumber, sliced

  • Toasted sesame seeds

Dressing:

  • ½ cup sour cream

  • 2 tsp tahini

  • 2 tsp lemon juice

  • Salt flakes & freshly ground black pepper

Method:

1. Toss together the cabbage and vinegar. Set aside for 20 minutes, whilst tossing occasionally.

 

2. When ready to serve, divide spinach leaves between serving bowls. Accompany with the rice, ½ an avocado, shredded chicken and cucumber.

 

3. For the dressing, combine all ingredients and season to taste.

 

4. Dollop dressing over salad and sprinkle with sesame seeds.

For a quick lunch or snack, purchase precooked and portioned rice. Simply heat through and use in the salad. Add a poached egg or your favourite ingredients you have on hand.
