Shredded Chicken Nachos


  • ⅓ cup corn kernels

  • 6 cherry tomatoes, quartered

  • 2 spring onions, finely sliced

  • Olive oil

  • 200g pkt corn chips

  • 1 cup grated tasty cheese

  • 1 cup (160g) Moira Mac's Shredded Chicken

  • 1 green chilli, sliced

  • Sour cream, guacamole and coriander for serving


1. Pre-heat oven to 180°C (160°C fan-forced). Combine corn, tomatoes and spring onions. Drizzle with a little olive oil and set aside.


2. Layer half of the corn chips onto an oven-proof tray. Scatter with half of the chicken and half of the cheese. Repeat layering and place into the oven for 6-8 minutes, or until cheese is melted.


3. For serving, dollop the corn chips with guacamole, sour cream and corn salsa. Scatter with green chilli and coriander. Enjoy immediately.
