Chicken Drumstick Salsa Bowl

Ingredients:

  • Moira Mac's Smoked Drumsticks

  • Brown rice with quinoa

  • Corn kernels

  • Red capsicum

  • Spring onion

  • Coriander

  • Lemon

Method:

  1. For salsa mix, roughly chop spring onion and capsicum. Combine together with corn kernels and coriander leaves in a serving bowl. Mix well. 
     

  2. Rinse rice through cold water. Place rice into saucepan with water and bring to boil, stirring occasionally. Reduce heat to simmer. Remove from heat, drain and serve.
     

  3. Heat chicken drumsticks and serve on bed of rice and quinoa. Garnish with salsa mix and a squeeze of lemon.
