Stuffed Chicken with Garnished Carrots

Garnished carrots are a delicious and healthy side dish that serve perfectly with stuffed chicken and winter vegetables.

  • Moira Mac's Onion and Herb Stuffed Chicken

  • Baby carrots

  • Walnuts

  • Feta

  • Pomegranate seeds

  • Mint

  • Olive oil

  • Salt and Pepper


  1. Wash, peel and roast carrots.

  2. Roughly chop walnuts and feta into equal size pieces.

  3. Cut, separate and seed pomegranate.

  4. Garnish carrots with a scattering of pomegranate seeds, walnuts, feta and mint leaves. Finish with a drizzle of olive oil and salt and pepper as desired. Serve with Moira Mac's Onion and Herb Stuffed Chicken and your choice of winter vegetables.
