Mediterranean Chicken Tartlets


  • Reduced fat puff pastry sheets

  • Zucchini

  • Reduced fat feta cheese

  • Lemon zest

  • Dried oregano

  • Ground cumin

  • Fresh mint


  1. Preheat oven to 200°C. Cut zucchini into thin slices.

  2. Cut a defrosted puff pastry square into 6 even sized rectangles. Place onto baking trays lined with non-stick baking paper. Squeeze each corner of pastry together to form tart cases.

  3. Top each tartlet with zucchini, dried oregano and ground cumin. Crumble over some feta and top with Moira Mac's Shredded Chicken.

  4. Bake until pastry is puffed and golden (about 10 minutes). Garnish with lemon zest and chopped mint.
